Easy Pumpkin Cookies

Hi again!

I made cookies!

 Super, easy, 2 ingredient cookies!  YES…..I said TWO ingredients!  (well, they were 2 ingredients until I stuck the candy kisses and Milky Way bars into the middle of them, but you can make them with just 2 ingredients 🙂 )

I found these simple cookies on a blog called Cookies and Cups.  LOVE IT!  And there are other 2 ingredient recipes there too…..try the brownies…..super good.

 I spend so much time in the kitchen making meals, that quick and easy dessert recipes are very important to me.  These cookies are great.  And you can change them up with whatever you have on hand, which is a huge plus. 

Mix together a can of pure pumpkin and a box of Spice Cake mix…..wah lah!  That’s it.

The batter is thick and a little bit sticky.  I ran out of parchment paper, but they still lifted off of my stone ok.

As for the chocolate middles…. I have all kinds of left over chocolate candy in my refrigerator.  I will buy a bag to make something and end up with like 8 left over, so I put them into a Tupperware in the fridge.  Before I know it, there is an awesome mix of candy goodness in there!  So what better recipe to add my left-over candy to?  For these I used Pumpkin Spice Hershey Kisses and Caramel Milky Way Minis.

Easy Peasy!!


Easy Pumpkin Cookies (recipe from Cookies and Cups)

  • 1 (15 oz.) can of pure pumpkin
  • 1 box of Spice Cake mix

– Pre-heat oven to 350 degrees.

– In a medium bowl, mix pumpkin and cake mix.

– Drop by rounded teaspoons onto a sprayed cookie sheet (or onto parchment).

– Bake 10 to 12 minutes, or until centers bounce back when touched.

– Top to suit (chocolate, caramel, powdered sugar, frosting…..).


Simple and delicious!

    Love that you put the milky way in the center! (It is a milky way? ‘Cuz OMG I WANT ONE.)
